Lightly grease a baking sheet for placing the coated apples on. Step 2: Dissolve the sugar in the water over a moderate heat.When it has dissolved, stir in the vinegar, syrup and butter. Step 3: Bring to the boil and cook until it reaches a hard crack stage.This should take about 10 minutes.To test this drop a small amount in a glass of cold water. If it is ready a blob of toffee will form which is slightly stretchy but breaks with pressure. If using a thermometer, a hard crack should be between 146 - 155 degrees C. Step 4: Dip each apple into the toffee turning it to completely cover the apple. Step 5: Leave the apples on the prepared tray.Wrap in cellophane for gifting.
