Raring2make!Raring2make!Raring2make!Raring2make!Raring2make! Butternut Squash Stew with Curly Kale This is how you do it! 1. Add the oil to a large saucepan set over medium heat. 2. Add the onions, garlic and carrots and cook for about five minutes, until softened. 3. Stir in the turmeric, cinnamon and ginger and continue to cook for another minute until the spices become fragrant. 4. Turn the heat down to low and add in the lentils and passata, cooking for a further 15 minutes and stirring occasionally. (You may need to add a little more passata during cooking.) 5. Add the squash, black-eyed peas and stock to pan, then simmer for 30 minutes until the squash is tender. 6. Once the squash has been cooking for 20 minutes, steam the kale for about 10 minutes, either over the stew or in a separate pan, until slightly softened but still bright green. 7. Stir the kale into the squash and lentil mixture, then season to taste with a bit of salt and pepper. 8. Serve in bowls, either alone or with slices of crusty wholemeal baguette. Makes 2 Portions, Suitable for home freezing, Preparation 15 minutes, 50 minutes cooking time, 140 C°, 275 F°, Gas Mark 1 Ingredients l2 tbsp olive oil l1 onion (diced) l1 clove garlic (chopped) l1 carrot (diced)l1/2 tsp turmeric l1/2 tsp ground cinnamon l1/2 tsp ground ginger l50g red lentils l250ml passata l350g butternut squash (peeled & cubed) l 1/2 400g can black-eyed beans l750ml vegetable stock l80g kale (shredded) lPinch of salt lPinch of pepper l 2 slices wholemeal baguette. Savour the wintery symphony in a bowl that is butternut squash stew and curly kale. HELPING HANDS We live in a world where young women are told they can be anything they want – where dreams can come true .. but we also live in a world that brings lots of pressure and expectation and where everything is visible and the online world is filled with those who are always #livingtheirbestlife. So it’s no surprise to me that for ay young women the pressure to succeed can feel immense .. and the one thing which doesn’t seem to change is that you need to be great at life but also still be focused on your external self. I started the Bemoore Foundation because it was clear that there was a gap in supporting our young women to process the world they live in and ensure it feels relevant to them. I also hoped to create healthy relationship boundaries and prevent some of the challenges I see with adults who enter my clinic space. It’s all very well being told you can be anything you want – but f your world is based on something very different, if your environment does not support that or if you feel consumed by how you are meant to be this message is not helpful. Our main aims remain consistent – to work wit our young people to ensure they feel good about who they are first ad foremost and provide a safe place to be head. Through our Roaring for Ife coaching programme which can be delivered 121, in a group setting or as a talk we focus on key skills – managing and understanding emotions , having clear boundaries in relationships , knowing who they are and embracing those skills and traits and feeling able to make clear relevant decisions about their life. Our caches are all trained in both coaching and other therapy techniques. And we like to stay in touch, so a number of our young women go on to be matched with a mentor who meets with them once a month to just give them a continued safe haven. We may be small right now, but we have big plans to expand and bring our message to a wide audience. So if you know a young women aged 11-18 or if you work for an organisation which supports them please get in touch – whether its to raise confidence, create a positive self- image, work through per challenges , life transitions , exam stress or just general stuff causing anxiety we can offer support through our funded programme. And if you would like to support us then do get in to discuss how you can sponsor or make a donation – helping us to help the generation of young women to come. Friends for Life provides friendship to elderly people living in care homes who may otherwise feel isolated or lonely. Through volunteering, local residents have the opportunity to connect with individuals in need, share meaningful experiences, and help foster a more inclusive and caring community. Friends for Life was founded in 2007 to tackle loneliness and social isolation (which can have a profound effect on physical and mental health) in Bedford’s Care homes by creating meaningful relationships between volunteers and the elderly. Studies have shown that regular social engagement can significantly improve the quality of life for elderly individuals, and for volunteers, this experience can be equally rewarding. Our activity Lead has recently been involved with 5 schools and Colleges linking them with numerous care homes in Bedford as part of their wellbeing activities or their course in Health and Social Care. Multi-generational engagement is received very well by the residents and raises awareness of the impact of age-related issues in the community. Friends for Life welcomes volunteers from all walks of life as either a one-to-one befriending volunteer or as an activities volunteer where you can help with activities such as baking and crafts or perform music or art.
