Step 3: Bring to the boil and cook until it reaches a hard crack stage.This should take about 10 minutes.To test this drop a small amount in a glass of cold water. If it is ready a blob of toffee will form which is slightly stretchy but breaks with pressure. If using a thermometer, a hard crack should be between 146 - 155 degrees C.
