Butternut Squash Stew with Curly Kale 1. Add the oil to a large saucepan set over medium heat. 2. Add the onions, garlic and carrots and cook for about five minutes, until softened. 3. Stir in the turmeric, cinnamon and ginger and continue to cook for another minute until the spices become fragrant. 4. Turn the heat down to low and add in the lentils and passata, cooking for a further 15 minutes and stirring occasionally.(You may need to add a little more passata during cooking.) 5. Add the squash, black-eyed peas and stock to pan, then simmer for 30 minutes until the squash is tender. Ingredients l2 tbsp olive oil l1 onion (diced) l1 clove garlic (chopped) l1 carrot (diced)l1/2 tsp turmeric l1/2 tsp ground cinnamon l1/2 tsp ground ginger l50g red lentils l250ml passata l350g butternut squash (peeled & cubed) l 1/2 400g can black-eyed beans l750ml vegetable stock l80g kale (shredded) lPinch of salt lPinch of pepper l 2 slices wholemeal baguette.
