Feeding the ducks Feeding the ducks is a lovely way for children to connect with nature. Watching lambs wobble through their first steps or seeing fluffy chicks under heat lamps is unforgettable for little ones. Ingredients Makes approx. 15 cookies 185g plain flour 1½ tsp ground ginger ½ tsp bicarbonate of soda 50g butter (room temperature) 85g soft light brown sugar 1 large egg yolk 2 tbsp golden syrup Assorted decorations e.g. Mini Smarties, M&M’s, currants or raisins Writing icing or white and pink icing made with Royal Icing mixed with water Spring recipe Easter Cookies Method 1. Pre-heat your oven to 180°C / 350°F / Fan 160°C 2. Line or grease two large baking trays with parchment paper. 3. Sift the flour, ginger and bicarbonate of soda into a mixing bowl. 4. Cut the butter into chunks and add to the bowl. 5. Rub the butter into the flour using your fingertips until the mixture looks like fine breadcrumbs. 6. Stir the sugar into the mixture, then add the egg yolk and golden syrup and mix everything together using a wooden spoon. 7. Sprinkle a clean work surface with flour and knead the dough until it is smooth. Cut the dough in half. 8. Sprinkle the work surface with a little more flour and roll out the dough, starting at the centre and rolling evenly outwards. 9. Repeat with the second ball of dough. 10. Cut into shapes using cookie cutters. Re-roll the trimmings until all the dough is used up. You can add currants for eyes before the cookies are baked if you like. 11. Place on the lined or greased baking trays and bake for 10-12 minutes. 12. Allow to cool, then transfer to a wire rack. 13. Once completely cool, ice, decorate and enjoy! Raring2go! RECIPE
